Franchise Solutions Limited is seeking to recruit a Sous Chef who has a passion for his art and can take full charge of one of their Illy Caffé outlets in Valletta.
Reporting to the Outlets Manager, the Sous Chef will be responsible for all the respective kitchen employees and shall seek to set up the kitchen standards whilst managing the various activities and daily requirements needed.
Main Duties will include:
- Establishing specific culinary standards for the restaurant to meet the needs of the targeted market
- Developing dishes and when possible, using locally sourced products with the best prices
- Maximising employee productivity to minimise payroll costs
- Organizing and setting up the assigned sections as effectively as possible and ensuring that all dishes from the section are consistently prepared
- Monitoring food and operation costs
- Ensuring that the kitchen’s operating equipment is maintained to an excellent standard with minimum breakage
- Understanding fire, hygiene and safety policies whilst maintaining a high standard of personal hygiene at all times
- Selecting employees together with the Operations Manager whilst planning and implementing an effective on job skills training
- 2 – 4 years’ experience working in a similar role or as a Chef de Partie in a hotel or similar environment
- Possess good verbal and written communication skills in English
